Pisang Gorang (Banana Fritters)

Pisang Gorang (Banana Fritters)

3 tbsp (45 mL) all-purpose flour
1 egg, beaten
1 tbsp (15 mL) (scant) granulated sugar
1 tsp (5 mL) vanilla or brandy
1/4 tsp (1 mL) salt
2 very ripe bananas, roughly mashed with fork
2 tbsp (25 mL) vegetable oil (approx.)
Icing sugar

In bowl, whisk together flour, egg, sugar, vanilla and salt, adding a little water if necessary to make thick paste. Mix in bananas.

In large heavy skillet, heat half of oil over high heat; drop batter by tablespoonfuls into pan, in batches, and fry for about 1 minute per side or until brown. Add more oil as necessary between batches to keep a thin layer of oil in skillet. Keep fritters warm. Serve sprinkled with icing sugar. Makes about 15 small fritters.
