RHYTHMS OF ROSELJE (Sweet and Sour Herring Salad)
Accompanied by some tasty rye bread, this dish can make a complete meal. Thanks to the beets, blending these ingredients results in a pretty pink colour. This recipe is truly a red herring!

Yield: 6 servings

3 potatoes, cubed 3
1 1/2 tsp salt 7 mL
4 dill pickles, finely chopped 4
2 beets, (freshly cooked or canned) peeled and finely chopped 2
2 apples, chopped 2
4 salted herrings, drained and chopped 4
1/3 cup sour cream 75 mL
1/2tsp pepper 2 mL

In saucepan, cover potatoes with cold water. Bring to boil; add _ tsp (2 mL) of the salt. Reduce heat and simmer for about 15 minutes or until tender. Drain and rinse under cool water. Let cool completely.

In a separate saucepan, cover beets with cold water. Bring to boil. Reduce heat and simmer for about 30 minutes or until tender. Drain and let cool completely.

In large bowl, combine pickles, cold beets, apples and cold potatoes. Stir in sour cream, remaining salt, and pepper until coated. Gently stir in herrings.

Variation: add cubes of cooked beef to the above ingredients.
